Basic information

Soybeans, commonly known as yellow soybeans, are an annual herbaceous plant belonging to the dicotyledonous class, Leguminosae family, and Glycine genus. Originally from China, they are cultivated throughout China and widely grown worldwide. Soybeans are one of China's important food crops, with a cultivation history of five thousand years. They were historically called "shu," and northeastern China is the main production area.
Soybeans are rich in high-quality protein, abundant dietary fiber, lecithin, and natural estrogens, and they have functions such as enhancing immunity, promoting digestion, regulating cholesterol, lowering blood sugar and lipids, and whitening and protecting the skin.
Soybeans can be processed into various soy products, such as soy milk, soybean oil, tofu, bean curd sheets, and dried bean curd sticks.

Soybean meal is a byproduct of extracting soybean oil from soybeans. Domestic soybeans have an oil yield of approximately 17% and a meal yield of approximately 80%.

Soy isoflavone content is calculated as the sum of six components: daidzin, genistin, glycitin, daidzein, genistein, and glycitein. The first three components are glycoside forms, while the latter three are aglycone forms. In natural soybeans, soy isoflavones mainly exist in glycoside form, with very low levels of the aglycone form, generally not exceeding 15% of the total content.
Natural series: 5%, 10%, 20%, 40%, 60%, 80%. Synthetic series: 99% daidzein, 99% genistein. Added series: Natural 20% + (synthetic daidzein/synthetic genistein) = 40% soy isoflavone (most common)
