Nutritional properties

Mushroom protein mixture has high protein content and rich amino acid profile, and is a high-quality source of plant protein. Studies have shown that different mushroom species and growth substrates have a significant impact on the nutritional content of mushrooms.

Protein content

Waste tea and sawdust substrate: The highest protein content, reaching 26.60%.

Cottonseed hull substrate: The protein content is second, reaching 22.10%.

Polysaccharide content

Polysaccharides are important nutrients in mushrooms, with immunomodulatory and antioxidant effects. Studies have shown that mushrooms cultured in waste tea and sawdust substrates have a higher content of polysaccharides.

How it is made

 

1. Raw material selection and pretreatment

Raw material selection: Select fresh, pollution-free edible mushrooms as raw materials. Common mushroom species include shiitake mushrooms, oyster mushrooms, king oyster mushrooms, enoki mushrooms, etc. These mushrooms are not only high in protein, but also rich in polysaccharides, vitamins and minerals.

Cleaning and sorting: The picked mushrooms are thoroughly cleaned to remove dirt, impurities and microbial contamination. Then sort them to remove damaged or deteriorated mushrooms to ensure the quality of the raw materials.

2. Crushing and extraction

Crushing: The cleaned mushrooms are beaten into pulp by mechanical crushing equipment to destroy the cell wall and release the protein and other nutrients in the cells.

Extraction:

Water extraction: Use water as a solvent to extract water-soluble proteins and polysaccharides in mushrooms through heating or ultrasound.

Enzymatic hydrolysis: Use specific proteases (such as papain or alkaline protease) to enzymatically hydrolyze mushroom pulp, decompose large molecular proteins into small molecular peptides and amino acids, and improve the extraction rate and bioavailability of proteins.

Acid-base extraction method: By adjusting the pH value, the protein is dissolved under specific acid-base conditions, and then the protein solution is separated by centrifugation or filtration.

3. Separation and purification

Centrifugation: The extracted mixed solution is centrifuged to separate the solid residue and the liquid part containing protein.

Filtration: Further remove impurities through microfiltration or ultrafiltration technology to obtain a high-purity protein solution.

Precipitation and drying:

The protein is precipitated from the solution by isoelectric precipitation or salting out.

The precipitated protein is washed to remove residual solvent or salt.

Finally, the protein solution is converted into powder by spray drying or freeze drying technology to obtain mushroom protein powder.

4. Formula design and mixing

Formula design: According to the nutritional requirements and functional characteristics of the target product, mushroom protein powder is mixed with other functional ingredients (such as dietary fiber, vitamins, minerals, etc.) in a certain proportion to make a mushroom protein mixture.

Homogenization: The mixture is evenly mixed through a homogenizing device to ensure that the ingredients of each batch of products are consistent.

5. Sterilization and packaging

Sterilization: Use high temperature transient sterilization (HTST) or ultraviolet sterilization technology to kill microorganisms in the product and ensure food safety.
